leftover surprise*
*except it wasn’t really leftovers.
last night i made up something for dinner that turned out pretty delicious. i followed a tried and true leftover routine with new food, tossed in some experimentation, and voila: edible AND yummy!
we spent the morning at the allemany farmer’s market, which is something special. (we’ve already scheduled weekly visits.) david and i went with friends, and were often independently seeking foodstuffs, so the fact that we didn’t double up or over-purchase is pretty impressive.
i bought many delights, one being purple and white-striped eggplants. they’re adorable: squat, scrumptious, round-bellied goodness. not sure what to do with them, i found a recipe for and indian stew that sounded doable with the spices and staples i had on hand.
but when it came down to dinnertime, we were both too hungry to endure the time required of the stew, so i jumped in and relied on what i had learned from reading this recipe earlier in the day. i heated some olive oil and garlic, and tossed in one sliced eggplant, half an onion, sliced fingerling potatoes, and lots of curry, some cumin, a dash of cayenne, and some butter for flavor.
after everything was softened and good and combined, i scooped everything into a bowl, and placed a frozen tortilla (i keep ‘em in the freezer) in the hot and emptied pan. i flipped the tortilla until thawed and beginning to turn golden. at this point, i spooned the mixture into half of the tortilla with sliced parmesan (david’s only request of this meal) and folded the empty side over to create a half moon shape. when the innards were reasonably melted, i served it with greek plain yogurt. i forgot to add cilantro, but it was really good and filling.
