good recipe for scallions
the other day, someone mentioned another’s struggles with all of the scallions she had received in a weekly csa box. i remembered feeling the same frustration around the bushels (it seemed) of root vegetables we’d receive during late summer in minnesota. how many different ways can you use a turnip?
so here’s one of my fave scallion recipes, and i KNOW that the person with oodles of scallions digs this salad dressing, because i made it once and she commented. here goes:
spinach and lettuce salad with orange-scallion vinaigrette
Dressing:
1/4 C lemon juice
1/4 C orange juice
3 scallions, coarsely chopped
1 T honey
1 t finely grated orange zest
1/2 t tamari/shoyu sauce
1 C mild vegetable, corn, or peanut oil
1 T toasted sesame oil
process all except oil till combined. put pusher tube in place. with machine running, add the oils through the hole in the tube and process until emulsified. add more honey or soy to taste.
Salad:
1 head red leaf lettuce, leaves separated, washed, dried, torn into bite-sized pieces.
1 # spinach, washed etc
orange-scallion vinaigrette
1 C cashews, toasted
2 – 3 avocados, pitted, peeled and cut into 1/2 inch dice
2 juicy navel oranges, peeled and cut into segments and then into 1/2 inch pieces
combine lettuce and spinach on plates, and drizzle with vinaigrette. divide the nuts, avocados and oranges among the plates.
